The dish prepared with eggplant was formerly known as patlıcan borana. Onions, garlic, and green peppers are chopped and sautéed in a pan. After lightly sautéing, finely diced eggplants are added and gently cooked over low heat, allowing them to steam in their own moisture. Depending on preference, lamb or beef may be used.
