Traditional Pan-Cooked Bulgur Dish

In Kalecik, Fıtfıtı is made from the finest bulgur. For a serving of 1–2 people, a portion of tail fat is melted in a pan, while the remaining fat is fried until crisp. Butter, finely chopped onions, tomato paste, and the bulgur are added, followed by water. Black pepper, red pepper flakes, dill, and parsley are sprinkled on top, and the dish is cooked gently without stirring, allowing it to slightly stick to the bottom. Fıtfıtı is traditionally served directly from the pan in which it is cooked. Today, it is a dish that is slowly falling out of common use.
