Preparation The stuffed vine leaves (sarma), which derive their distinctive flavor from the naturally grown vine leaves of the region, are an indispensable dish at wedding ceremonies. While the vine leaves prepared for weddings do not include minced meat, those made for everyday consumption are prepared with minced meat. First, the vine leaves are blanched. Subsequently, a filling consisting of rice, generous amounts of onion, parsley, tomato paste, and spices is prepared, and the leaves are individually stuffed with this mixture. The wrapped vine leaves are then arranged in a pot, and lamb ribs are placed on top. To enhance aroma and flavor, güvey flower herb, which grows locally, is added. The distinctive taste imparted by the lamb ribs and the güvey flower herb gives this dish its unique and characteristic flavor.
