Recipe
For Flour Tarhana, yogurt is first strained. Chopped tomatoes, peppers, and fresh mint are added to the strained yogurt. Lentils may also be added optionally. Flour and yeast are then incorporated, and the mixture is kneaded thoroughly. After resting for one day, the prepared mixture is spread onto clean cloths and left to dry. Once dried, the pieces are crumbled by hand, passed through a sieve, and stored in cloth bags. For cooking, a portion of the tarhana is taken into a bowl and soaked with water. In a pot, oil is heated and tomato paste is sautéed. The soaked tarhana and water are added, and the mixture is stirred continuously until it comes to a boil. The soup is then simmered over low heat for an additional five minutes and is ready to be served.
