Tirit, which is обязательно prepared at weddings and religious holidays and is one of the traditional dishes of Elmadağ, differs from other types of tirit in that it is made with locally produced tandır bread and has a spicy flavor. To prepare tirit, vegetable oil is heated in a deep pot and finely chopped peppers are added. Once the peppers begin to soften, chopped tomatoes and tomato paste are added and sautéed. Sufficient water is then added, and the sauce is left to cook. Meanwhile, veal with the sinews removed and cut into cubes is sautéed for a while. After the meat becomes tender, the prepared sauce is added and the mixture is cooked for approximately 15 more minutes. The tandır bread, cut into cubes, is placed on a serving dish. Once the meat is cooked, a small amount of sauce is first poured over the bread to soften it, after which the meat and remaining sauce are evenly distributed over the bread before serving.
