Preparation Pişmaniye, which is traditionally prepared during the winter months, is made by heating water and sugar in a pot. To prevent the sugar from crystallizing, citric acid is added to the mixture. Flour is then incorporated and the mixture is carefully roasted until the desired consistency is achieved. Separately, flour is spread onto a tray, and the cooked mixture is transferred onto it. The mixture is then stretched and pulled by hand repeatedly until it forms fine strands, at which point the pişmaniye is ready to be served. In the local dialect, this confection is also known as “Pişmane.”
