Recipe
The dessert known as Pazar Böreği takes its name from the practice of people wrapping it up and placing it in their bags when going to the market. To prepare this pastry, a soft dough is made using flour, eggs, salt, and warm water. The kneaded dough is rolled out thinly into a round shape and brushed with a mixture of vegetable oil and butter. It is then folded from all four sides and rolled out once again. A mixture prepared with one egg, baking powder, and soda is poured over the dough, which is then cut into a baklava-style pattern. Optionally sprinkled with walnuts, the pieces are fried individually in hot oil and then topped with previously prepared syrup. Once ready for serving, Pazar Böreği may also be prepared with a cheese filling, depending on preference. When made with cheese, it is consumed without syrup.
