Höşmerim Dessert

Flour and a pinch of salt are added to boiling milk rich in cream, and the mixture is stirred rapidly until it forms a dough. After resting briefly, the dough is fried in a pan with butter while being continuously stirred over low heat for an extended period. A serving plate is placed over the pan, and once the underside is thoroughly browned, the dish is inverted onto the plate. Powdered sugar, honey, or molasses is then poured over the top before serving. According to local tradition, the story of Höşmerim is as follows: In a village, a wedding took place, and the bride was left alone at home, as her parents-in-law were not present. Upon waking in the morning, she combined the flour, butter, and milk available in the house. Finding the mixture unpalatable at first, she decided to fry it in butter. After tasting and approving the result, she served it to her husband and asked, “Is it pleasant, my dear?” (“Hoş mu, erim?”). Over time, this expression gave the dish its name, Höşmerim.
