Preparation This dish is traditionally prepared to make use of stale bread. First, onions are sautéed generously in butter, followed by the addition of tomato paste and dried minced meat. Subsequently, eggs are cracked into the mixture and sautéed thoroughly. After adding a small amount of water, stale bread pieces are incorporated. The mixture is not kept on the stove for long in order to prevent the bread from becoming overly soft. The dish is served topped with garlic yogurt and is consumed immediately. The distinguishing feature that sets Ekmek Aşı apart from Tirit is the use of garlic yogurt instead of minced meat as the primary accompaniment. Generally consumed at midday, this dish is preferred when served to larger groups.
